Relay Foods Review

Hey friends! Today we're switching it up! I am going to share my experience with an awesome company called Relay Foods. What is Relay Foods? Only the best concept EVER. Shop for local and organic groceries online and have them delivered to your front door or pick them up at one of their pickup locations. This is a lifesaver for those weeks where you're super busy (or lazy) and don't have the time to go grocery shopping. Their site is super easy to navigate. See something you want? Just click add to cart and add the quantity! I guarantee in a matter of five seconds you'll have like 20 things in your cart. All their food are from local producers, which I love! Why buy produce that's traveled thousands of miles when you can purchase it in your own backyard. You know exactly where food is coming from and in my opinion that's pretty awesome.

I could not have choose a better time to use Relay Foods. Last week was insane! With my birthday and work and I did not have the energy nor the time to go to the store. So I placed my order of kale, yellow onions, mushrooms, croutons, pizza dough, Italian Cheese and blood oranges (I was curious). My fridge and pantry weren't completely empty so I decided to make due with what I had and add a few things.

Now as you all know I'm a kale fanatic. Kale smoothies, juice, salad and chips are my jam. Feeling a little unhealthy from all the birthday festivities I decided to make a kale caesar salad, with grilled chicken and mushroom parmesan flatbread. I threw on my Spotify playlist and got to cooking, I might have burned myself with the oven but hey, no pain no gain aka food. Here are the results...

Kale

Parmesan Flatbread

2 bushels of kale
Kale 3 cloves of garlic
1/3 cup of extra virgin olive oil
1/2 teaspoon of salt
Pinch of red pepper flakes
10 turns of black pepper
1/3 cup of grated parmesan cheese
1/4 cup of crushed croutons

  1. Wash and dry kale
  2. Chop kale into tiny pieces, put in a bowl and set aside
  3. In a smaller bowl crush garlic and add lemon juice, salt, pepper and red pepper. Once everything is mixed together slowly whisk in the olive oil.
  4. Then take your dressing and add to you cut up kale and massage with your hands. Refrigerate for 30 minutes.
  5. After 30 minutes or so remove the kale from the fridge, add the parmesan and crushed croutons and toss together.
  6. Add some extra parmesan on top for garnish! (optional)
     FIN-

MUSHROOM PARMESAN FLATBREAD(source- my life as a mrs.)
Flatbread 1 pound of pizza dough
8 ounces of thinly sliced baby bella mushrooms
1 onion
4 cloves of garlic chopped
3/4 teaspoon of salt
Fresh cracked black pepper
3/4 a cup of shaved parmesan cheese (I used an Italian blend)
flour for dusting
Olive Oil
2 teaspoons of cornmeal

  1. In a skillet heat up some olive oil and sauté the garlic, onion and mushrooms. When soft remove from the pan and place on a paper towel lined plate so they can drain.
  2.  Preheat your oven to 475 degrees. Then roll out your dough into three equal pieces. I could't find my rolling pin so I used a glass cup.
  3. I also don't have a pizza stone so I lined a cookie tray with some parchment paper and sprinkled some cornmeal on top so the dough didn't stick. Place all three pieces on the tray and bake for 2-3 minutes, poking it with a fork as it start to bubble. Then flip and bake the other side for 2-3 minutes.
  4. Remove the bread from the oven and change the oven setting to broil. Drizzle a little bit of olive oil on the bread and add the mushroom mixture and cheese. Cook until brown.
  5. Then try not to burn your mouth as you stuff your face with this deliciousness

The Perfect Workspace

Hello friends! I don't know about you all but I've been having the summer of my life! It's been filled with tons of sun and good times. Let's get into the specifics!

I've visited friends and family

I've been eating...a lot

This Cheesecake Factory ricotta and sausage flatbread was so delicious!

The Fractured Prune Donuts are tasty as always. This was the French Toast donut...SO GOOD! The OC Sand is great also!

Busboys and Poets with friends! This Grilled Cheese and Bacon Panini was delish! #noms

Consuming large amounts of caffeine, but thats on the reg.

The caffeine has been a must lately since I'm in the process of figuring out what I'm going to do with my life. There are no pictures of that because it would just be me in the fetal position sobbing...JUST KIDDING! It would actually be a picture of me at my computer doing hours and hours of research. I don't mind all the work because I'm setting up the foundation for my future which I'm super excited about! Plus i'm cultivating awesome content for you all ;)

I believe the process of doing my research and cultivating content would feel better if I had the perfect workspace. I recently bought a white desk from IKEA which I am in love with! There is one piece that is missing but I plan on buying it a a later date.

I specifically want an inspiring workspace that makes me happy to work at! So I'm taking on a new project..."Project Perfect Workspace" is a go. When I decided to create a new workspace naturally, I went on Pinterest for about three hours looking for inspiration. I found some amazing spaces that got my interior design juices flowing.

Lauryn creator of the Skinny Confidential has the most perfect workspace. She recently just wrote about creating the perfect workspace and I have taken notes!

Her space is so fun!

Here is some more office inspiration.

Do you all have any tips?! Let me know!

Real Life: What I'm Loving Wednesday!

Bonjour Everyone! Recently when catching up on some blogs I noticed that a lot of people were doing What I'm Loving Wednesday's and I thought that was just darling! So I decided that I would jump on the bandwagon and do one of my own. I thought this would be perfect to do because I have been loving on a lot of things lately.

Food & Drink:
I have been reunited with Vita CoCo, and boy am I happy. I use to have this regularly and all of the sudden I just stopped. It's so refreshing and filled with electrolytes, so it's perfect for a pre-workout beverage.
I am so in love with these dark chocolate covered Acai berry's! They are so delicious and they're the perfect little summer time treat! Try refrigerating them! Yum!

Good Reads:
I just started reading Meg Cabot's Queen of Babble, and it's such a great book! There's never a dull moment. Can't wait to finish it!

Cosmetics:
My Clinique gel moisturizer is perfect for summer. It's light yet very moisturizing.
Also Loving my MAC Mineralized Skin Finish Powder! I've been having some skin issues lately and it covers it right up!
This Burt's Bee's lotion is great for summer it has a little bit of shimmer in it giving you a summer glow without being in the sun forever.
Randoms:
This Nike Trainer app has been kicking my butt! If you want a really good challenging workout get this app! I promise you won't regret it!
I recently just joined the IFB (Independent Fashion Bloggers) network. This was the best decision ever, there are so many helpful tips for blogging and the community is so friendly!
My Toms have been my best friend this summer. I'm constantly on the move at work and these shoes are really comfy and look cute!

What are you guys loving?!

Real Life: Dear Sandy,

Dear Sandy,
Due to your hurricaning, my classes have been cancelled today and maybe tuesday as well.  My roommates and I have stocked up on food so we never have to leave.
Thanks a lot.
