Relay Foods Review

Hey friends! Today we're switching it up! I am going to share my experience with an awesome company called Relay Foods. What is Relay Foods? Only the best concept EVER. Shop for local and organic groceries online and have them delivered to your front door or pick them up at one of their pickup locations. This is a lifesaver for those weeks where you're super busy (or lazy) and don't have the time to go grocery shopping. Their site is super easy to navigate. See something you want? Just click add to cart and add the quantity! I guarantee in a matter of five seconds you'll have like 20 things in your cart. All their food are from local producers, which I love! Why buy produce that's traveled thousands of miles when you can purchase it in your own backyard. You know exactly where food is coming from and in my opinion that's pretty awesome.

I could not have choose a better time to use Relay Foods. Last week was insane! With my birthday and work and I did not have the energy nor the time to go to the store. So I placed my order of kale, yellow onions, mushrooms, croutons, pizza dough, Italian Cheese and blood oranges (I was curious). My fridge and pantry weren't completely empty so I decided to make due with what I had and add a few things.

Now as you all know I'm a kale fanatic. Kale smoothies, juice, salad and chips are my jam. Feeling a little unhealthy from all the birthday festivities I decided to make a kale caesar salad, with grilled chicken and mushroom parmesan flatbread. I threw on my Spotify playlist and got to cooking, I might have burned myself with the oven but hey, no pain no gain aka food. Here are the results...


Kale

Parmesan Flatbread





2 bushels of kale
Kale 3 cloves of garlic
1/3 cup of extra virgin olive oil
1/2 teaspoon of salt
Pinch of red pepper flakes
10 turns of black pepper
1/3 cup of grated parmesan cheese
1/4 cup of crushed croutons

  1. Wash and dry kale
  2. Chop kale into tiny pieces, put in a bowl and set aside
  3. In a smaller bowl crush garlic and add lemon juice, salt, pepper and red pepper. Once everything is mixed together slowly whisk in the olive oil. 
  4. Then take your dressing and add to you cut up kale and massage with your hands. Refrigerate for 30 minutes. 
  5. After 30 minutes or so remove the kale from the fridge, add the parmesan and crushed croutons and toss together. 
  6. Add some extra parmesan on top for garnish! (optional)

MUSHROOM PARMESAN FLATBREAD(source- my life as a mrs.) 
Flatbread 1 pound of pizza dough
8 ounces of thinly sliced baby bella mushrooms
1 onion
4 cloves of garlic chopped
3/4 teaspoon of salt
Fresh cracked black pepper
3/4 a cup of shaved parmesan cheese (I used an Italian blend)
flour for dusting
Olive Oil
2 teaspoons of cornmeal

  1. In a skillet heat up some olive oil and sauté the garlic, onion and mushrooms. When soft remove from the pan and place on a paper towel lined plate so they can drain. 
  2.  Preheat your oven to 475 degrees. Then roll out your dough into three equal pieces. I could't find my rolling pin so I used a glass cup. 
  3. I also don't have a pizza stone so I lined a cookie tray with some parchment paper and sprinkled some cornmeal on top so the dough didn't stick. Place all three pieces on the tray and bake for 2-3 minutes, poking it with a fork as it start to bubble. Then flip and bake the other side for 2-3 minutes. 
  4. Remove the bread from the oven and change the oven setting to broil. Drizzle a little bit of olive oil on the bread and add the mushroom mixture and cheese. Cook until brown. 
  5. Then try not to burn your mouth as you stuff your face with this deliciousness
