Well today I hit up the gym with mama bear and I must say I'm feeling okay. Although, I'm sure by time morning comes around I won't feel so great. I'm definitely feeling motivated this week! I thought losing a few pounds would go to my head and I would stop or slack off. But not at all! I just want to lose even more weight! I was was even excited to go workout out, which is strange because I never use to look forward to my workouts. If I keep this up I'll be 40 pounds lighter by the end of the summer!
So for dinner tonight since I had such a great workout I thought I should make a healthy and delicious dinner so I whipped up my favorite summer salad!
You can make this salad with:
1 cucumber (I took off most of the skin)
1/2 of a red bell pepper
1 chopped carrot (I just used a handful of baby carrots)
1/4 cup of red onions
1/2 a cup of cubed pepper jack cheese
Italian dressing
Combine everything and put your desired amount of Italian dressing and mix everything up! This recipe is super quick and tasty!
In addition to this salad I had one smart one quesadilla. Yum!
